It's just a disgusting mess. It's generally way too cheesy, the crust typically sucks, everything about it is ****. And people from my beloved city of Chicago go ape **** for it. And in my very humble opinion, Uno's is one of the least offensive deep dish pizzas, although I've only had it at the actual Uno's in Chitown and not the national chain.

Deep dish is disgusting. Matt, you should try cooking your deep dish with veg for around ten minutes or so.

But not in liquid, otherwise it will turn gray.

but uno's (the original one in chitown) pizza dough/bread/crust is just plain gross. it's too plain or something and the texture is offputting

This happens with all deep dish. Either that or they try to make that flaky buttery pie crust style and it isn't strong enough to hold the 17.7 pounds of ****** ingredients they toss in there. See, like I said, with deep dish there is no good option.

This, and the usefulness of beautifully cut lemon spikeys are the two things on which Midas Matt and I will never agree.

No, sorry, you have had this explained to you a number of different ways, ranging from scientific to experiential to authoritative. You have rejected them all out of sheer stubbornness.

What is very plain to me is that your frequent professions that "I know I have a lot to learn, I am just trying to get better" are BS. You say that because you know it is the right thing to say, like what Crash Davis tutored Nuke Lalouche to say once he got to the show. You don't actually believe a word of it. You think you know everything and are already Top Chef and when challenged you fall back on the same sarcastic trope that every argumentative Netzian uses "Ooh, sorry I have insulted one of the web gods, pardon my lese mageste."

Then usually a meltdown follows. At least you have avoided that this time, which is progress.

Extra points for a post that contains both a Bull Durham reference and old French law based on the ancient concept of not offending the royalty.

Uno's is not great, not that I have ever been to the original. Zachary's is astoundingly good.

business meeting at a local steakhouse. copious amounts of kettle one to get the night started, bone in ny strip with creamed spinach, creamed corn and au gratin potatoes. a couple of nice cabs with the meal and dow's 20 year tawny in the bar to finish the evening. thank god i don't eat like that every night!

I agree. I'm not sure where it ranks in the pantheon of Chicago deep dishes but I had Ginos when I was in the city and I don't know if I would characterize it as disgusting but definitely not worth the hour wait and a waste of one the few meals I had in the city. The toppings/sauce were nothing special and you had to eat alot of them since it was a deep dish.
