Well what the hell is it then? Some other type of fish that I've never heard of, in a soup?

You don't see much salmon that is bright white.

Doesn't look that white to me. And the farmed varieties, look very much like the top of that fish when cooked. At least on my ****** laptop monitor they do.

It looks like salmon to me too. Or maybe char. Not with soup, but in a cream sauce. With sorrel maybe?

Matts first dish looks like it has dumplings or something stuffed, ravioli like, in brodo. I like the actual bowl/plate you used for this

I'm a little confused. Are you guys saying the third plate is a soup? Doesn't look that way to me.

Its the angle of the pic that gave me that impression I think. If you look at it, it looks like there is a gap between the plate edge and table. So I thought it was in a bowl and not on a plate.

Again with the quail vaginas.

+1. It seriously is really gross to look at. I'm still curious about your portions though. your shrimp dish consisted of one shrimp, did you just buy one shrimp? How many people did you cook for?

I think the gist was that it looks like a ton of sauce drowning the salmon.

I think it's the angle of the photo. Same as with Rambo thinking it was a bowl. It looks great to me.

Yes, I got that. It is a particular, and particularly famous, dish. Not something you change, you either like it or not.

Well, your version sure looks a lot more faithful than this random attempt documented on someone's blog:
