hitman, what do you do with the sugar? sorry to seem stupid, but I just want to make sure I uderstand.
In marinating the bird, salt sugar and pepper is all I use. Â Sugar gets absorbed in the flesh of any meats much much quicker because meats have natural sugars in them. Â That is the reason why meats brown when you cook them. Â The combination of sugar and protein with high heat creates those great favors we all crave. Â Thus, marinating the bird with sugar and salt produces a much better product at the end. Â Also granulated sugar doesn't burn as quickly as say honey so it also aids in even browning but every little color. Â Honey with the butter is the way I found that creates the best golden brown while adding great flavors too. Â Of course, we can add herbs to this too. Â I find sometimes lemon in the marinade to be a great addition. Â After you finish with the juice, you can stuff the juiced out lemon in the bird.
