I actually just made the pork loin/sauerkraut casserole about a week ago with spiced red cabbage and spaetzle.
Sometimes I'll replace the red cabbage with german potato salad. mmmmmmm......
And the point on the easy crock is dead on, that's what I always use when I make sauerkraut. I typically do a batch a year, but i just do the plain jane cabbage, salt, and caraway seeds.
So many people don't believe me when I tell them sauerkraut shouldn't be made iwth vinegar (like so much sotre bought stuff is). Just salt and cabbage.
All this talk about cabbage makes me want to make cabbage rolls. Think I just figured out what dinner tomorrow is. . .
