The hot sauce thread

I enjoy a good hot sauce and use it for most things I eat. Sometimes I go for wanting to add flavor and some times I want to feelt he burn. I know it is the old standby, but I love Tabasco sauce for the flavor it gives. I like the vinegar and salt taste to it. I pull out the Insanity Suace when I want something really hot. I have tried over 25 different ones and enjoy tasting them. I have seen sauces that are way hotter than Dave's. Some even need a consent form signed before they sell it. Has anyone tried one of those? There is a local pizzeria I go to that makes their own hot sauce and it is out of this world. It is the perfect balance of flavor and heat. They refuse to give me the recipe but do sell it by the bottle. I was just wondering about your opinions on hot sauces. Thanks!!!

You mentioned Dave's Insanity Sauce-- that's my go to sauce.

My goto is Tabasco or Tapa Tio, which can't be beat for 99 cents a bottle or so. People collect this shit but I have only tried about 4 other kinds and I don't remember what they taste like really.

Sriracha is good stuff. There's a guy in Hoboken, New Jersey who makes hot sauce under the name 'Hoboken Eddie'. Try his sauces if you can find them. He bottles crushed habanero in vinegar to sell locally as his F**kin Hot Sauce. It's pretty hot.

The rooster is great!!

I think so many people get obsessed with how hot a sauce is and neglect the flavour.

Yeah, I enjoy the heat, but ultimately, I want something that is going to enhance the taste of my food also.

+1, that's the most important thing. I'd rather have my mouth sting for a few minutes and have added flavor than have all my tastebuds burnt off and not be able to enjoy any flavors at all.

Valentina - hands down the best hot sauce ever. I have turned on several friends who are aficionados and they agree. The best.

The legend by CaJohns is great....and insane in its heat and flavor.
I have no idea on the cost, each bottle comes in a birch box and every thing is hand numbered and has the bottle number from the batch.
It is made from Red Savina Habanero Puree, which has a flavor that is faintly like peaches.
I wish I had 20 bottles of this stuff.

Rooster Sauce is awesome. Great in soups. I also like Texas Pete and Red Hot.

I like Cholula for regular hot sauce needs. It doesn't have as the overpowering vinegar taste that Tabasco has. There's also a habanero sauce called Marie Sharp's that is really good - hot, but you can still taste the pepper itself. Love the sriracha (or any of the variety of chili pastes) for any kind of asian food. Sriracha is actually good on fried chicken, too.

I stay away from anything that references explosive diarrhea, butts, etc as a matter of principle. They are usually one-dimensional, and spend more time on the heat than they do on the flavor.

BTW - Making your own is pretty easy. There are tons of recipes, but the easiest is to just puree whole peppers with some vinegar and salt. You can add garlic if you want, but I just keep it pure. You can use it immediately or let it sit for a while. I find myself doing that more often, as I can tailor the heat to my preferences.

I'm somewhat picky about my hot sauces. I never liked the taste of regular Tabasco but did enjoy the chipotle variety.

Stuff I do like:
-Louisiana (brand) Hot Sauce. I like how it's a touch less spicy than Tabasco so that you can dump it on your food evenly. I also just prefer the rich vinegar taste.

-Mae Ploy Sweet Chili sauce:
I usually dump this on anything and everything. Great stuff.

-Frank's Red Hot. Tastes good by itself but I primarily use it with an equal portion of honey for a simple chicken recipe.

-Banquete Chilero.
"Chilero" is just a generic term for hot sauce and unfortunately that means that when a company here in CR uses that word on their label you have no idea what to expect. I'd say about 80-90% of the time it's used to mean a Tabasco-style condensed sauce. Banquete's style, and there are a handful of other companies that have a similar concoction, comes in a bigger bottle because it has a consistency like that of the Sweet Chili sauce. The taste is a med-spicy pepper mix that's fantastic with rice and beans.

My standard sauce is D.L. Jardine.

It's a habanero sauce with a carrot base. Of course, I worked my way up to that over time, so I can taste the flavors and not just the heat.

I love tabasco sauce too. The original is best but all of the varieties are delicious. I sometimes smuggle the green jalepeno sauce into restaurants.

The Louisiana brand hot sauce is nice too but I rarely venture far from tabasco.

Not a hot sauce collector, I just use Chulula.
