I sometimes see a material by the name of "flax" when describing a mixture of two or more fabrics(i.e. 50% wool,50% flax). What in the world is "flax"?

Flax is linen. Or linen-like. I believe it's interchangably used with 'linen' though. I've heard it's the coarse part of processed cotton, but I'm not 100% sure.

Flax is the plant from which linen is derived. The stems are soaked in water, and the fibers are taken from the stems.

Random historical factoid: Ships carrying flax to Ireland from America to be turned into linen returned with immigrants as balast.
