Shun elite vs Pro2?

Are the differences mostly aesthetic?

I like the handles on the Shuns because they really seem to help a proper grip by not feeling as bulky and contoured as the german ones.

Are there any other substantial differences between them? Has anyone tried the Ken Onion 10"?

Shun Elite uses higher quality steel and stays sharper a lot longer. I still have not sharpened mine, ever. A few passes with the steel, and I get them as sharp as they were out of the box.

The great Manton is correct. Shun Pro uses VG-10 steel hardened to RC61 while Shun Elite uses SG2 steel hardened to RC64-66. VG-10 is stil nothing to sneaze at and is used by a lot of higher end Japanese knife manufacturers.

Functionaly, Shun Pro line is not a direct comparision to the Elite line as the former contains single bevel knives in japanese patterns for preparing traditional japanese cusine while the latter has double bevel western-japanese pattern knives. Shun Classic line is the less expensive Elite line alternative.
