Human nature? What's wrong with caring? Despite the 'I'm cooler than shit' tropes of 21st c. people, most of us still actually prefer not to have others give us unwanted or negative attention. In my own experience, those who claim they don't give a shit are in fact looking for attention.
Does anyone really want to be watched while they put food in their mouth?

I prefer lone dining in more casual restaurants, also.
I had a girlfriend who worked in a tiny tapas restaurant that was so small it catered to couples and lone diners, and since she often worked the restaurant alone, she came to become friendly with some of them. One guy came in a few times with world maps and pictures of the sailboat he had just purchased to travel around the globe. She didn't think poorly of such diners, but she did feel as though they might want someone to talk with, and--oddly enough--they often did.

I actually find that I have to try to keep people from trying to talk to me, when I am dining alone. I usually have some work to do, a book or newspaper to read, and sometimes I surf/email/make calls on my cell.
I went to a great meal last night, in a relativly fancy resteraunt. pretty much everybody else seemed to celebrating with a group. I actually ordered several dishes that I wanted to try, and just had a tiny portion of each. I might have attracted attention, or not, I really don't care.
