I had baked bacon in the army and it was never as good as fried. But this just looks too awesome so I may have to try it myself!

I'm not religious.

This thread is probably bad for my health. I'm cooking a big pot of beans with a chunk of smoked pork jowl.

A plate of rice and beans, a fried egg and some chorizo, and I'll be set for a coronary artery bypass graft. Life is good.

But dogs are much more endearing! In point of fact, we really don't particularly rate our affections for animals based on intelligence. Horses are bloody dumb, but lots of people love them. Chimpanzees probably stand right below us at the pinnacle of mammalian or animalian intelligence, but I, for one, really don't like these vicious, violent creatures. I would rather eat a chimpanzee than a dog (although I can think a few breeds I wouldn't feel too bad about consuming).

Oh, and I do love good pork in its myriad forms, including ham hocks and head cheese.

I bet you'd have to braise a chimp though. They look tough to me; lots of connective tissues.

I believe one of the threats to chimpanzees is their popularity as "bush meat" among the Africans. I guess some folk find them tasty enough.

They're are the good bits of a pig. I'd rather have any of these bits over a piece of boring tenderloin.

A report of the event.

Cosentino had a female pig. How do we know this? Because uterus was just one of the pig parts in his sofrito, along with spleen, kidney and stomach. It was topped with brain aioli ("brainnaise").

Agreed. We had one in law school. Our cookouts were very well-attended.

I love how pigs fetch apples too. Truly loyal creatures.
