I haven't found enough cocktail recipes that utilize dark rum to make me want to purchase a bottle, but if I did, I would probably go for El Dorado 12. Under $30/bottle and very highly regarded.

I use Plantation 6 or Goslings, never tried Zaya. I also use Zacapa, El Dorado 12, St. James Ambre as needed.

 

AC, ever had a Corn'n'Oil? I had a Rum Old-Fashioned once that was one of my top-5 cocktails!!!!!

Just picked up three bottles of Encanto pisco, and last night I mixed up a pisco sour: 2 oz. pisco, 1 oz. lemon juice, 1/2 oz. simple syrup, 1 egg white, shaken and strained, angusturro bitters to finish. Bliss.

I was underwhelmed. Not bad, just not distinctive. It tastes like a standard London Dry to my untrained palate. I think additional study is necessary.

I had a pretty good ginger cocktail recently, it was a bourbon long drink with a ginger and chili simple syrup. IMO, it could have done with less chili- the bourbon and ginger was successful on its own. There may have been something else, but I don't remember. But that could give you something to play with.

Or you could riff on the Dark 'n Stormy, with a shaken cocktail pairing the rum and ginger. You could toss some other flavor in as well if you wanted.
