Tipping is the privilege of an effectively self-regulating population of restaurant patrons.
If we did not make a custom of tipping servers, restaurants would have to pay them higher wages--this would either increase the cost of food on the menu, or (more likely) induce a service charge. It's only because Americans are pretty accurate tippers that we get to tip instead of being forced to pay a pre-set amount (which, in turn, lowers your server's incentive to do his job well).
