Apples are a great source of energy. Seriously, they're almost as good as coffee, without the negative effects.

Throw in some nuts and you've got a filling, energy-boosting breakfast.

Apples have an estrogenic affect and as I have recently been told by an oncologist that I am susceptible to estrogen receptive cancers I must avoid them. Bummer!

Spam musubi.

If you wrap them (or any other kind of omusubi/onigiri) loosely in plastic wrap the rice won't get everywhere in the car, but they are still easy to eat one-handed.

organic fruits and vegetables. You need to eat raw ones every day anyways, so you might as well eat some brocolli with a little dip on the move or some apples. Apples are one of the best things you can possibly eat.

Also, a sandwich is good too.
