best apple i ever ate was an organic fuji. 

i spent like 79 cents which is a stupid amount of money for an apple but i was hungry and at a hippie co-op. i remember thinking fuck this better be a good apple and it completely blew me away lol.

 

yeah honeycrisp are very nice. i been buying those lately.

there are some fun casinos in Northern California (I think it was Cache Creek) that have a "all in - busted Aces" payout. I remember it was something pretty nice like $100 if you lose going all in with rockets.

I even did it once as insurance before the river (one guy was on a flush draw but it was a smaller side pot) everyone was laughing because they new I had aces. I kind of had to because I was pot committed (for around $700) and was splitting the majority of it (about $600) in a side pot so it worked out beautifully I won the majority side pot with my aces, and still profited on a loss on the smaller side pot with the $100 busted aces bonus.

I'm happy today because I made a totally gross unhealthy assed breakfast. Bacon, eggs, pancakes, all cooked in bacon fat on a skillet. I even had that southern sweet syrup and sweet tea with it.

I promised myself I would only eat this type of stroke/high blood pressure/diabetes inducing southern food on the weekend.

Three strips of thick cut bacon, scrambled eggs, and pancakes.

 

Used the bacon fat to cook the eggs too, but I found out it makes for a piss poor non-stick grease. Will stick to butter next time.

by the end of the weekend of eating like this I can feel headaches and my left foot start to tingle.

I know southern food gets a bad rep for being unhealthy (because of fat + sugar + salt ) in what seems like every meal, but there is a lot of healthy normal southern food (lots of vegetable dishes and lean meat dishes). I've been enjoying the healthy southern food as late and want to learn how to cook it, but sometimes you want bacon fat waffles and fried chicken + sweet tea. I think I'm going to have that for dinner tomorrow. nod[1].gif

Bacon fat makes excellent, albeit unhealthy assed, cooking grease. You have to strain/filter it as you can see I have filtered bacon fat in the clear bowl. I actually baked my bacon. Just lay foil on a cookie sheet (with a lip of course) and bake at 400°F for 12-14 min (to desired crispiness). Then filter the bacon fat onto a skillet/storage jar.

Yeah, never heard of bacon grease not making good cooking grease. I often use a little to add flavour to something I'm sauteing or caramelizing. A little bacon grease to augment olive oil when you're sauteing cauli or broc? Yum.

Not sure what I did wrong, but I didn't have filtered bacon fat like Larry brah. I just emptied the excess bacon fat from my pan and tossed in the eggs to scramble. I immediately noticed that the eggs were sticking to the pan much more so compared to when I just use butter.

The eggs stuck to the existing fond (the brown bits that stick to a pan from sautee). Next time spoon a bit of bacon grease into a different pan for the eggs.
