it doesn't make cooking quicker, but it makes things so much easier (because of the constantly regulated temperature).
korean fried chicken so much easier. southern fried chicken even easier. french fries perfect and easy now.
i use rice brand oil (has a very high smoke point), that last so much longer now (I do filter it after every use) since the oil is never over 350F-375F with the deep fryer.
