I eat steak once or twice a week. I am really good at cooking them. I just love them so much. I don't care what people say about my colon.
I go to a butcher that has a calf muscle cut that they call the "merlot" because it is very dark red. Apparently it is a much more popular cut in France, not so much here. It has a bit of a gamey flavor, not much fat, but still pretty tender. Not that pricey either. Eating that with a red Bandol is killa.
