Not really sure what is happening here.....

Also, some less qualitative data would be nice... either measurements of size or weight... or a timelapse collage of photos to see the side-by-side size more clearly.

This is what I think is going on, without being 100% sure because this Mr. Aussie here really doesn't explain very well what he's trying to accomplish.
Essentially, he's showing that carbing up after a week of low-carb, high protein diet will at first make you retain water, but will allow you to put in extra effort in the gym afterwards. Hence, once you shed the water weight you will find that you have gained muscle mass.
Basically, benefits of carb cycling. I think...
