I had a similar situation as you three weeks back, and had a great shopping experience at Mildblend Supply. They have a nice shop and excellent service. Also offers on-site hemming. I bought two denims, SDA 103 and N&F Elephant 5. Satisfied with both, but elated over the fit and feel of the 21 oz Elephant 5. My first heavy denim.

Can't recommend them enough.

If you're taking the Blue Line to Mildblend, then also hop off at the Logan Square stop and check out Meyvn (say hi to Noah). Not really a denim/workwear store, but they have stuff like Blue Blue Japan, Engineered Garments, Needles. Afterward, get a cocktail at Longman & Eagle (Michelin star recipient).

Not too many other workwear-ish stores here in Chicago that I know of. If you get to the loop and check out Leffot they have Wolverine (say hi to Sean). Just know that they close early (6pm).

Independence in the Gold Coast neighborhood if you are into workwear-ish kind of stuff.
