I need lunch ideas!

So I'm sick of the boring old turkey/ham/prosciutto/whatever sandwich. I'd like to expand my lunch menu with fairly easy recipes. What do you guys like to make for lunch?

Open face sandwich is your friend.

Thin slice of good, fresh bread, creme fraiche, thin slices of cucumber, topped with smoked salmon... Green salad. Pellegrino. d-light!

Salad. With like every possible thing you can throw on there.... eggs, chicken bacon, turkey, cheeses, cucumber, tomato, green peppers, carrots, yadda yadda. You can cook the chicken the night before and chop it up so it's a quick fix for lunch.

Pho (or any other noodle soup) Tomato soup and grilled cheese Croque Monsieur Proscuitto open-face on baguette with lettuce, tomoato, egg over easy Chili-cheese hot dogs Quiche

How about buying a rotisserie chicken as the basis for your chicken salad, or just poaching some boneless/skinless chicken breasts? Poaching takes no time at all.
