Quarter zip sweatshirts...fold down collar or leave it popped?

I have a few quarter zips (though they're called mockneck on the tag, not sure if that makes a difference). They're a little thicker and look woven together rather than what I usually see. Should I fold down the collar? Or leave it up? All of the pictures I see online of quarter zips the collar is up, is that just for models and not for an everyday person? Lol

Also would a regular tie or a knit tie be better if I wore it over a dress shirt?

I have a pure alpaca one I like to wear when it's freezing. The collar isn't built for "popping" so it naturally folds over.
I prefer the look of the collar up, personally. Same with polo shirts, I pop the collar.
