I don't know if I'm a #menswear gent, but I wear a panama hat in summer.
I've also got a similar, but more casual, hat that's made from woven paper that I got in Japan a few years back. It's crushable and rollable, so you can easily pack it into a bag and then just jam it on to your head and it regains its shape.
If you're not keen on panama hats, then I'm not sure what else you can wear. Flat caps or newsboy caps generally look odd with a suit or odd jacket and trousers and summer's generally too warm for a fur-felt hat.
There's always the trusty bucket hat, but that doesn't look too good when you're dressed up, either...
I would always try RTW suits for a less formal occasions. Unless you have a wardrobe with 20+ bespoke / mtm suits. Also lot of the time mtm/ bespoke don't get it right at the first time. I would try mj bale drop 8 suits first. They have many pick lapel suits. Or even suit supply. Have multiple RTW suits, find out what really suits you before spending big on mtm/ bespoke. FYI I am quite skinny 5'10" and 51-51 kg suit supply 34r firs well and mj bale drop 8 fits with very minimal alterations.

Not sure if MJ Bale meet your criterion for full canvassing, however. It shouldn't be too hard to find out. Half canvas would be my guess.
Panama is hardly #menswear gent, unless you bring the game with the rest of your fit. They're fairly ubiquitous even among non-style conscious circles of men from middle age up and probably one of the easiest 'proper' hats to wear. If you can try a variety on, you may be surprised how well they can work stylistically while being incredibly functional.
Another almost equally functional choice would be the boater, but that will take some serious #menswear panache.
