I tried Hugo Boss and Givenchy - Pi today. Boss is a little strong, and the latter... yes I agree really sweet. Probably not the best for Winter.

What's the purpose of that?

It's the same concept for dressing differently for different times/events/weather. During the day running around casual, something brighter and fresh suits your activities and attire. At night and in cooler weather, you generally are more "out on the town" and something a bit deeper, intimate, and formal may be better suited.

Personally, I use cologne more on the basis of weather than day/night, though going out at night gets a more formal cologne.

For day/warm/fresh, like Au de Grey Flannel, Pure Vetiver, and a generic vanilla-based scent. Nothing extroardinary.

For nights/cooler weather, I like Grey Flannel, Corduroy, Lucky Number 6, and lately Aspen has been nice (yes, it's cheap...yes, it's at every drug store....but it's a good, cheap, simple scent!). I've been mostly playing with mixing Aspen with others to get a slightly different scent, though.

try paco robanne. i just bought it and it smells amazing. it is very strong so 2 sprays is enough to last you hours. i really like it. the new black one, not the others which are more of an older person cologne.
