I like 2 best, but it is sometimes difficult getting shirts to cooperate. They can splay open a little too much depending on the fabric and how well they have been ironed.

1 or 2, as mentioned it's all about spacing (and cut). Sometimes with only one undone the shirt pulls too much around the buttonhole.

With button down collars I can usually undo two and everything stays trim and together. With point collars it's usually one unless they are a casual smaller one. Otherwise they get too unruly.

Typically 1. 2 if it's hotter.
