Beef Jerky

How do you make it?

After all these years I got a dehydrator and am making my 2nd batch. Nothing too interesting, just:

-Soy sauce
-Worcestershire
-Brown sugar
-Cayenne pepper

I would like to try some new things, like maybe putting crushed mustard seeds in with the marinade next time, or use jerk sauce. A lot of online recipes call for liquid smoke, but that has always left a bad aftertaste when used in other foods. Are some brands better than others? What cut of beef do you use?

Anyone try making lamb or buffalo jerky?

I know people that make it, but don't know a lot about the process. Take it easy on the liquid smoke, some brown sugar definitely is great, and try some well-crushed up dried red pepper along with coursely crushed black pepper for a peppered-jerky.

I don't know where you live, but if you want some REALLY good and tender jerky, find someone near you that hunts and buy some deer meat from them. IMO, deer meat comes out MUCH better than beef for jerky.

My favorite would be deer or elk jerkey that we'd make after coming back from Oregon. Basically was red wine, salt, pepper, garlic and rosemary.
