Quick! Need Idea on how to cook snapper

I have a 4 pound red snapper in which need to be cooked or frozen ASAP, I dislike freezing fish thats never been frozen. It much bigger than the whole snappers I'm used to, which I usually fry and marinate in a mixture of vinagar, pepper & other veggies and seasoning over night warm and eat. I'm not in the mood for that, I've comtemplated curry, but not sure if snapper's the best fish for that.

Roast it.
Score skin, sprinkle with salt, lemon grass, Thai peppers and +++; drizzle oil and white wine. 20 mins should do it; serve with Marcel Deiss Pinot Blanc and some Jasmine rice.

Cook it on a charcoal grill. I lightly baste olive oil, salt, and some lemon juice on mine.

Two excellent suggestions! I'd add some fresh herbs to #2. Just put them inside the fish.

(red) Snapper is actually great in a thai style curry.

Grill it in the oven, lightly seasoned. I use Herbamare.

Snapper is an incredibly versatile and exquisite fish. All of the above options are fantastic, and it certainly lends itself well to curry or sour soup. If it's possible I think I'd be inclined to charcoal grill it and go with a sqeeze of fresh lime.

I ended up currying(Jamaican) it, it can out much better than I expected.

nothing beats blackened snapper imo....but that could be the coonass in me talking.

Snapper is good lightly battered and fried, in fact it's one of the best fish to cook in that manner to my knowledge.

On the Thai tip, coconut batter + Thai curry sauce is a pretty good way to go.

I'm probably going to curry up some fish tonight. How did you do yours? Anybody else have good recipes for currying fish?

Old snapper tends to be dry unless you use liberal amounts of oil.
