I dislike their fries, and it's not because they are fresh vs. frozen potatoes. It's the cooking method. If you cook fries a single time they come out like In-N-Out. If you cook them twice, in a process akin to the method used for Belgian frites, the fries develop the crunchy outer layer that In-N-Out fries lack even when ordered well done. I've eaten plenty of fries made from fresh potatoes that kick the crap out of In-N-Out's fries, and have the serum cholesterol levels to prove it (well, proof of quantity if not quality).
McDonald's fries are not freeze-dried, they are par-cooked before being frozen and shipped to the stores where they are cooked a second time. If you were to eliminate the step of freezing them between cookings, they'd improve in flavor and texture, but still would not resemble In-N-Out fries.
