What would you guys go with?

Cream or stone.
Edit: On a sunny day.

Would navy be too much? What about gray herringbone?

Navy blazer with navy chinos doesn't look good, because it looks like you are trying and failing to fake a suit. If the jacket were distinctly lighter or paler, it could work.

Gray herringbone might work. Its a look i do in slower days at the office in the summer when im too bored to really try. Solid but a bit "beh"

Hmm I see. If I were to change the trousers from navy to cream/stone, and keep the tan shoes and belt, what kind of colour blazer would go well with this?

Navy. Or a dark tan check.

With the first look, some kind of light gray with a hefty chunk of texture. Navy pants are tough.

Even the gray herringbone might work. It's technically ok but I'm not a big fan (although again I do it from time to time)
