I know that some Japanese knives are made of ceramic. They cut better and are much sharper but maybe they are more brittle and easier to break? Ive used them before but Ive never dropped them so I wouldnt know if they are easier to break...

I've dropped my Globals before and none of them ever broke. Granted they are not as nice as Shuns.

I've never broken my Shuns, but I have from two different lines, the main line, and Shun Pro. I don't think I could break the Pros no matter what I did. I have the 8" Deba and that thing is so thick it could probably chop most meat cleavers in half. You might want to look at some of the different Shun lines, or alternatively knowing your affinity for high quality items, go to knife forum and read through their kitchen knives forum (also this thread here: http://www.styleforum.net/showthread...ht=knife+porn). Look at makers like Bob Kramer who can custom make a knife for you for around $500.

My parents were house-sitting for us one summer and let some shoemaker in the local bell-ringing, knife-sharpening van violate our Globals
I still haven't had the heart to tell them or take the knives to the kitchen store to be salvaged (if that is even possible)

I've never damaged a knife. I've lost a few, but otherwise have never done more than dull one through use.

When I worked on carpentry crews on Nantucket, guys used to bring me chisels to sharpen that were so notched from hitting nails they were as good as useless. I'd put a hollow ground on them using an inverted belt sander and then hone and strop them to near razor sharpness. I'd give them back with the caveat that if they brought their chisels back to me in that condition again, I'd keep them because they didn't deserve to own them. Not that I never put a nick in a chisel, but nobody ever brought me back a chisel with more than a flea-bite.

I used a chisel to bust the overpour off a concrete foundation one day. It was, however, a three dollar Home Depot chisel to begin with, so... barely a chisel at all. I should send it to you to sharpen. You'd probably have a stroke.

There are wood chisels, metal chisels, and stone chisels. Do you mean to tell me you used a wood chisel?
