Black would also look good. I think dark brown would be best. Afterall, It's easy to darken afterwards, not as easy to lighten

Re: sole edge color for the navy shell Jodhpur boots. I like how the dark brown/dark antique edge looked on my midnight blue calfskin single monks from Epaulet. That would be my preference. I think black would be fine as well though.
