Which brand(s) of kitchen knives do you use? My paring knife disappeared (wtf?) and my chef got some major chip so I need to replace what I'm really using (fuck knife blocks). Not gonna talk about my preferences because I want a variety of opinions.

Shun, Wusthof, Victorinox probably best value, best to go to a knife store so you can hold them - handle and weight is actually noticeable

Maybe not the most "beautiful" or "artisanal" of knives, but Global is a decent value. Good enough for both restaurant or home use.

FYI I also have preferences and access to stores, I'm also trying to get people to share what they like so that it is sort of a streetwear ressource.

A mix of French made Sabatier's mainly Mercier et Cie but I think there's a couple of other brands in there (I mainly use just two knives). I occasionally use a Japanese made cleaver and Santoku (no idea who the maker is).

I got my sister a Masakage Shimo knife for Christmas which was pretty great, very sharp out of the box and handled well.

I have a victronox fibrox. You don't need to baby them and can replace them when they get messed up. I might spring for a fancy knife eventually but i'd rather have other toys first.
