That Bollinger was one of the better NV champagnes I've had. Had some lox, camembert, asiago potato salad and chocolate cake to go with.

Bollinger is good, as is Laurent-Perrier for big house champs. I like the Egly-Ouriet and Bruno Paillard NVs for grower champs in the same price bracket. They are nearing perfection.

Going to pick up a bottle of Laurent-Perrier '02 and Billecart-Salmon Nicolas Francois '00 tomorrow or Friday (have not had either). Or maybe just get several bottles of Roederer NV (my usual goto NV). Open to suggestions.

Billecart-Salmon rosé is one of my faves. ^

my go to nv is Veuve. I like more "yeasty/toasty" champs.

budget tip: Domaine Allimant-Laugner Cremant Alsace.

Veuve only for NV? What about La Grande Dame? I've heard the '04 isn't quite ready yet.

Not really a fan of La Grande Dame, the sulfuric VC nose is still there and overall it's hard to tell what you're paying for. Laurent-Perrier Grand Siecle is similarly priced and is extremely toasty.

Gosset is good. I went with Roland Champion Blanc de Blancs for my NV (never had before) and picked up a bottle of the '02 LP.

LP was pretty good, drinkable right now. Made of 50% Chardonnay and 50% Pinot Noir, it was pretty fruit forward.

You are a lucky guy. That's my favorite bar in the whole wide world. I haven't been in about two years, sadly, but I do love it so. Katy started just as my attendance was tapering off. Their Negroni is my favorite drink.
