You should paint the actual wall to look like your store. Whenever I see a photo that was partially photoshop it makes me wonder if the whole thing is fake.

Why not just pure white?  It's done everywhere, but there's a reason for that.

another vote for store background and YES to overhead shots for shapes of lasts.

 

as for saturation, it really isn't that overly saturated. It just looks that way especially when presenting brown shoes.

The best shots are the ones with smooth bokeh so that there is no distraction from the actual product. As to

actual colours of the leather and shoes, most of us will never get that representation from the shots because of differences in monitor settings

and white balance settings.
