In case anyone is looking for a new sharpening system...Massdrop has the Hapstone system that I always thought looked like a better option than the EdgePro (but seemed hard to find outside of eastern Europe). Metal construction and cool looking.

Way more expensive than the amazon edgepro knockoffs, but seems like an ok price for the unit plus set of silicon carbide stones in addition to the basic stones.

Not enough for me to upgrade... But I probably have 50 bucks worth of good stones on top of the knockoff (and probably would have cost double that if I hadn't made them myself).

Build quality is going to be way better... And it offers a few features that the edge pro and knockoff don't really have without some modding.

I'm glad I found this page. I have a bunch of knives and have been taking them to be sharpened but am now deciding on doing it myself. Really scared to **** up my nenox and masamoto though.

Aogami Super, which was maybe previously called Laser AS? Not sure exactly tbh...

In any event, great knife so far, though I haven't really put it through the ringer yet.

Reviving an old - but good thread. Long time Wusthof Classic line user and now looking to buy a couple Japanese knives. I am looking for a gyuto; probably a 210 or slightly shorter as 90% of home use is covered by either a 6", 7" or 8" chefs or santoku.

I'd like to keep my buy to <$200. I also like the stainless clad. Any suggestions?

MAC Pro MTH-80?

Comes in within your budget and hits your "slightly shorter" as it is actually a 200 rather than a 210.

That's a great recommendation. I'm also a very big proponent of these knives from Hitohira. Very well ground and in SG2 powder steel, which retains its edge like carbon but has the properties of stainless.
