Highly recommend trying feta cheese and fried salami in an omelette (a bit of rocket too, if you are feeling fancy)

try the Thai style omelet, type "ไข่เจียว" in google image. Go to Thai restaurant and ask for "kai jeao"

Feta cheese turns into a lactic mess when it melts. Eggs make sit worse. Do not want.

Agree if you let the feta melt. When I make it I add the (Danish) feta just before I fold the omelette over so it doesn't have time to melt, just softens up nicely. I only use a bit of feta though. Each to their own...

When my wife was pregnant, her favorite omelet was shallots and Parmesan. A bit bland for my taste, but it was something she could eat no matter how bad her morning sickness affected her.

Last week I sauteed Chanterelles and shallots, added crumbled bacon and parsley and put them into an omelet cooked in truffle butter, very tasty.
