I think that it's up to your individual preference.
Most people lace balmoral shoes in a straight bar pattern, but I have noticed that some people lace their balmorals in a criss-cross pattern, so I'm sure that you can do it that way if you like.
I suppose that it also depends if you have "speed hooks" at the top of the boot, or if you have eyelets all the way up. If you have speed hooks, you will have to use criss-cross lacing at the top of the boots, so it might look a bit strange if you have bar lacing for most of the way up and then criss-cross lacing for the rest of the way up.
