For me, num pang (and banh mi, to a large extent), is all about the different veggies you get in the sandwich.

The pickled carrots, the cucumber, cilantro, etc., are all what make them so enjoyable for me. The meat obviously is important as well, but it's not what makes or breaks the sandwich, IMO, as long as it meets (meats?) a minimum threshold of tastiness.

IMO it is the interplay between the veggies, the meat, and the bread. I once had a banh mi that would have been great except it was on a heavy torta style bread.

Exactly. With sushi/sashimi, the equivalent is the "pieces or orders". Even though it's entirely clear to me that I'm ordering 4 orders and 8 pieces, the engrish back and forth that follows always leaves me wondering if I we got it right. Dim sum is another concept where pencil/checklist is great. Also, the sandwich shop, burrito place, etc., you get a much higher level of accuracy.

i find that the accuracy is more important for thai/vietnamese restaurants than sushi. I mean, most sushi places fully understand what a "tuna roll, 4 salmon sushi, 2 eel sushi" is, and there's no variation with what your'e ordering. Thai is different where you have at least 8-10 types of curry or sauce-based items, 5 protein options, and (usually) 3-4 spice levels, on top of any omissions that can't happen in sushi (hold the tuna!).

When it comes to Asian food, I couldn't care less if they get the order correct. Sa'll good.
