I am looking for recommendations for a very high quality fillet knife that will be used for fish such as smallmouth and largemouth bass.

I have considered brands such as Wusthof Classic, but would like something with a more rugged look, distinguishing itself from traditional kitchen cutlery.
This will be a gift for my father's bday. He only cleans fish once a year at our cottage in Ontario, so this is a special item for him that will be part of a very old family tradition.
