"Downtown Train" by Everything But The Girl (Tom Waits) Both good versions, different vibes.
Lovers in a Dangerous Time by... Bare Naked Ladies (Bruce Cockburn). Not kidding. It's good. They actually have a cool live performance together.

As for Dylan, who could do a better-than-the-original cover of "Lay Lady Lay" or "Most of the Time"? C'mon now people. It's like saying the Janis Joplin's voice is too raspy or something: missing the point.

Both versions of "Always on my mind" (Willie Nelson and Pet Shop Boys) trump the original (Elvis Presley).

"Always something there to remind me" by Naked Eyes (Burt Bacharach/Dionne Warwick) and I can't help recallin'

"Head On" by the Pixies (Jesus & Mary Chain) makes me wanna blow the stars from the sky.

Connemara: Ruby Baby was originally done by Dion. And, I prefer his version.

Mad World is a great song by both the original (Tears for Fears) and the recent one (can't remember the name of that singer).

However, I have to say that I like a lot of covers while still liking the originals. If a cover is really done well, the singer adds a new perspective and gives the song a new meaning/feeling. I like both versions of Take me to the River. Green's was more soulful while the Heads' was more new wave. And, as I've said before Jimi's Watchtower gives the song a whole new feeling. Pure genius and my favorite cover of all time.

We Gotta Get Out Of This Place by Jello Biafra (DKs) & DOA (Animals cover)
With a little help from my friends by Joe Cocker (Beatles)
Last Kiss by Pearl Jam (some 50s band)

Special case: Don't Let Me Be Misunderstood by Joe Cocker (Animals) - I love the backing music on this but the vocals... meh. Not bad, but I want someone with a.. different sound to sing over this feel for this song. I actually really dig the salsa/disco cover by Santa Esmerelda too.

A long time ago, I went to a spot in Berkeley (can't remember the name of it) but Jerry Garcia was performing with, among others, Billy Preston. Jerry did a version of Smoky's Second that Emotion which was just great! Again, he put a psychedelic feeling to it which changed the song. In fact, I didn't really realize it was that song until a minute or so into it.

Also, there was a locally famous group called Fat and Sassy when I lived in SLO and they did excellent covers of Steely Dan hits. Their lead singer had a good stage presence and a lot of soul.
