I've finally made french fries with my deep fryer from scratch - from peeling and cutting the potatoes, then rinsing/soaking the fries in water then chilled in a diluted sugar/cornstarch bath. From there you fry them twice to get that perfect golden light brown crunchy outside and silky inside. Hell I even salted them lightly.
They're perfect, delicious, and great, but I'm pissed off that its a lot of work for home made fries. They sell adequate fries (who am I kidding... deliciously adequate) at McDonalds for almost less than the price I paid for the Russet Potatoes to make my home made versions.
