Because the alternative is much worse. All the "stand your ground" principle does is codify decades of Judicial rulings which say that you're not required to deliberate about your options while a knife is held to your throat. FLA used to be a state that required you to flee if possible when threatened with death or serious bodily injury. No one should be required
to run away from bad people. That's a law that encourages cowardice and frankly is anti-woman. It is unreasonable to second-guess a victim of a crime as to whether that victim, in attempting to defend him or herself, should try to either incapacitate the criminal or flee from the criminal. The duty to flee places the life of the criminal on a higher priority than the life of the victim.
Your hypothetical situation where someone acts like an egregious assholes and provokes a fight is not bourne out by real world examples. Show me someone who provoked a fight by being an egregious asshole and got away with murder. There isn't such an example, because it doesn't happen. There are far easier ways to kill people with premeditation.
