This is a topic I've become interested in, and I'm looking for the definitive books on the subject. The ideally book would be informative, accurate, but also entertaining. It shouldn't read like a textbook.

Which book? Her body of work seems to be mostly concerned with later history, notably the 16th and 17th centuries.

I've only read her work regarding the Thirty Years War, myself.

Title is "the 30 years war," just what you are looking for. interesting, non-academic, covers the whole conflict, etc.

The Thirty Years War and The Hundred Years War are unrelated; the latter occurred during the 17th century, and the former occurred during the 15th and 14th century.

I think the book you are looking for is Barbara Tuchman's "A Distant Mirror."
