I've found I don't really like the chiseled lasts, though I do have C&J Drummonds on the 348 last. They don't get very much wear. I do prefer sleeker lasts though like the 341 and 240 and you're right for the most part American lasts are a bit bulbous for me. With AE I prefer the 7 or 8 lasts which have a tapered, but not chiseled toebox.
All of your other points are valid with the Enzo Bonafe shoes though.

I agree, both those CJ lasts have a great profile.
Have you tried Carmina Inca?
It is very shapely, rounded, beautiful and proportionate.
Also, the Enzo Bonafe 804 is soo nice as well.
