Rubber cutting boards

anybody have any experience with them? Pros/cons?

I was looking at one from Korin, their 'hi-soft' boards, but they are rather expensive. Then I wandered into a cooking supply store and saw these rubber boards which look and feel the same as the Korins, but at a third of the price.

Will kop unless somebody suggests otherwise.

They have these at the FCI/L'Ecole. They are fine.

I use these at home. Easy on my knives and a breeze to clean up. I heartily recommend.

Most restaurant kitchens use them. They're fine. Not wonderful or very pleasing aesthetically but they aren't hard on your knives and are easy to clean and take care of.

Agreed on the aesthetics, they're flesh colored. But easy on knives and easy to clean is most important to me.

Yeah, I use them. Wood looks fine but who the fuck cares?

I don't display my blocks. I've gone back to using exclusively rubber.

I prefer wood. But that is because I am a Luddite from New England.

It certainly works better, but there are some things where I want ultimate functionality rather than appearance. There are few times where you have to sacrifice appearance for performance, but I guess cutting boards is one of them. I don't like the idea of leaving out cutting boards though... I can't seeing people leaving out a surface where they'll prep raw food, and putting grocery bags and random ship on top of it. To me it's not a sanitation thing but rather respect in a way, which I suppose sounds silly. But those Boos things are a bit stupid to me at this point.

I leave my cutting board out all the time, since I use it every day.

One day, I would like to design my kitchen with a cutting board built into the surface of the island.

sounds like a perfect way to capture moisture in the bottom of the board.

I agree with SField, I keep the cutting boards (and most everything else in the kitchen) put away. And when I design my kitchen ... well, I wont, it's part of what my better half does.

I probably use my cutting boards more than you do. Do you also put everything else you use every day on the counter?

And the cutting board idea is retarded. Harder to clean, and tons of shit will get under it. Cutting boards should be able to move...

I put everything away but my cutting board. It's so large that it doesn't even fit in any of my kitchen cabinets.

And I will take that bet. This summer, I've probably spent more time in front of a cutting board than anywhere else.

I'll agree with MM on that one. After all, most people have to go to work.
