I also appreciate how you set up capitalism on one side of the equation and ethics on the other smile.gif

Pretty much, "fairness" is a social concensus (never complete of course). Y'know operational definition.

So are prices, including labor prices.

Don't use your thumb to push food onto your fork. Don't hunch over your plate. Don't slurp. And don't blow your nose at the table - that's gruesome. All the other faux pas are pretty much forgivable.

You'll easily concede that I am standing outside of the social concensus on fairness and generally have "minority" opinions anyway. In fact the aspects I dislike the most about western market democracies and want to see change are the values and conceptions.

Except that's what makes Piob's example of valet parkers even more extreme/interesting than the example of restaurant servers. There's even less of a social convention that helps to determine what the valet parker should earn on a per/customer basis. At least 15%-20% at a restaurant is general knowledge. The basic question of what someone should earn at a "free" valet parking service gets *completely* obscured. And the only question that's left is the one of individual gratuities. Almost thoroughly effective evasion of the question of what labor should cost.

Addendum: haven't read more than the first page, but this might be interesting for those with Jstor access:

You know in a way that's crass but I think any pastry chef would have been more than a little flattered.

I remember my father wouldn't tip barbers who owned the place, but would tip employees, so that was a custom that lasted a while, though it is no longer the case. You know how it goes, once you get interested in something, you like to poke around.
I also was taught not to tip owners. I still don't, but I do tip their employees who render service.

In addition to the above, I hate to see elbows on the table.

Had I been at the next table, I would have thought, "Wow, true pleasure!" If dessert is so wonderful that it makes a grown man act like a child, maybe something is going right in universe.

I think this extends to members of the owner's family too.

Agreed. Thing is it's often an immigrant-run place, and I gotta wonder how well mom and dad are paying the kids and other relatives.
