Homemade Honeycomb

Has anyone ever tried to make it?

I am on my third attempt and it doesn't go hard and crunchy, just like a laffy taffy baldy[1].gif

I have used this recipe twice:

http://www.channel4.com/4food/recipes/chefs/gordon-ramsay/greek-yoghurt-with-honeycomb-recipe

and this recipe once:

http://www.foodnetwork.com/recipes/gale-gand/honeycomb-candy-recipe/index.html

I put the sugar in the pan, add water, then when it has melted the honey and corn syrup. how long do i have to wait before it goes that golden color? it seems to take forever. then the baking powder (which never seems to mix in properly and i'm left with lumps) then i pour it out wait a few minutes then stick it in the fridge

what am i doing wrong?

You're trying to make honeycomb. That job is for the bees.

I've used a different method*:

1) Buy a beehive.

2) Buy and install a swarm of bees.

3) Wait.

4) Collect honeycomb in second year.

So far, things are going well! smile.gif

*Not recommended for apartment dwellers.

It appears that you're adding the baking soda too early, the liquid needs to be @300F.
