Nice. I'll be interested in what you think of the Sermon. Their Streetlevel is more syrupy and heavier, but the recent batch of Sermon has been really nice ... in the right hands: thick, dark chocolate notes galore, whereas it's usually a little fruitier and more acidic. The grind size will totally change the character of the pull.

BTW, I took my sister (a coffee novice) to the Intelligentsia in Pasadena recently. The first words out of her mouth for their Black Cat espresso was: sour and acidic. Then, "If you hadn't told me that was coffee, I wouldn't have known." Ouch. But she was right.

Neapolitan styling is not my personal cup of tea by any stretch of the imagination, but appreciation of aesthetics should extend beyond personal taste if it is to be meaningful, and in that vein, this thread is an excellent (if partly/understandably rehashed) read.
