Lots of variables, but ideal is probably port with the cheesecake and then espresso with a shot of sambuca.

A Rusty Nail if I'm feeling sweet, really good scotch if I'm feeling manly. Otherwise, any number of ports, and traditional after-dinner cordials (Galliano, B&B, etc) depending on mood. I had this really dry, not sweet, amaretto from Portuagal out recently and I simply must find some and buy it. Regards, Huntsman

I think what you are referring to here is le trou normande--the idea being that a nice shot or two will burn a hole where you can stuff some more food.
I like armagnac too. Nothing wrong with a little eau de vie from Alsace either--framboise sauvage or poire William are my favorites. Marc or grappa if you are feeling a little sauvage yourself.
Not long ago I had a very nice conversation with my father-in-law about Norman rule in Sicily over a bottle of 14 year old Macallan.
