Yes, the Peals were channeled when new but was not really concerned about that personally.
Regarding the white stitching - I just looked at a few pairs in my closet. The Aldens and C&J benchgrades both use white stitching.

I'm probably wrong-I just had a look at a few pics of Peal & Co. shoes (had to go on memory, I don't have any of mine anymore) and it does appear that they are pretty flay in that area.
