Ah. His recipe says to just soak the peels in powdered sugar overnight in a vacuum sealed bag. Might give it a try.

I suspect that would probably work (and I have no reason to doubt Morgenthaler) I usually let the peels and sugar sit for some period of time and when I come back the sugar is always oilier than when I left it. A few good grinds to improve the contact and rupture the oil glands would probably still help, though.

Also, I drank a few Left Hands tonight.

You mean from Bordelet, or general Calvados. I'm only familiar with the American market, but the Calvados from him you can buy here is actually made by one of his neighbors. It's delicious, but next year's will actually be made by him.

Ah, alright. Yeah I meant the stuff that's already sold with his name on it. So, any pricing info for his own calvados?

This reminds me that I really need to pick up some of his cider and poiré. Great stuff.

Currently drinking some Strega and next some Plantation Barbados XO.

No idea, I know Nicholas Palazzi is importing it into the US, so I'm imagining it will be more expensive than in Europe. Apparently Bordelet had custom made bottles produced for him, so I'm imagining it won't be cheap.

God damn, Plantation Barbados XO is so delicious. Sure, quite oaky, but also super delicious. Oak, coconut, and that Barbados rum note. I got two bottles at 28 € each. A steal.

Also had a few Cuba Libres w/ HC7 over the past few days. Also super delicious.

Damn these United States. When I heard "restore diplomatic relations", I assumed-- reasonably, I think-- that this meant "get some goddamn Havana Club on the shelf in the next week of so." I'm still waiting. Thanks, Obama.
