Hanoi Strip Sour
From: Nathan Gerdes, Portland, OR, named the 2012 “Most Imaginative Bartender” at the United States Bartenders’ Guild Summit

2 parts Bombay Sapphire® gin
¾ parts fresh lime juice
¾ parts Pho specialty syrup
¼ part St. Germain Elderflower liqueur

Pho specialty syrup:
3 cups sugar combined with 3 cups water for simple syrup
2 medium-sized jalapeno peppers
1 cup cilantro leaves
2 cups Thai basil leaves
1 cup fresh ginger
2 Tbsp. grains of paradise
4 whole limes, sliced

For Pho specialty syrup: Place ingredients in a pot and bring to a light boil. Remove from heat and let cool. Strain and bottle.

Cocktail directions: Shake and serve in an old-fashioned glass on the rocks. Garnish with a lime wheel and Thai basil sprig.

Grains of paradise is some sort of pepper corn. I couldn't find it so I regular pepper corns. The simple syrup ended spicy. I let it boil on low for three minutes before cooling and straining. Next time I'd get it to boiling and stop it right to prevent so much heat from leaving the jalepenos and to preserve the more delicate flavors like the basil. I enjoyed the drink. The refreshing elderflower liquore plays off the spicy limey syrup for a really nice combo. My only tweak is to cut the lime juice down to 1/2 parts as it's already quite sour.
