I think the darkest, best quality chocolate you can find.

When I think on it, it's not that surprising. I like chocolate spiced up with a bit of chilli. Maybe the quite peppery flavour of Australian shiraz is providing a similar sensation, albeit more subtle.

Oh, it's not so much a percentage issue, just a quality issue. You can get too dark and too bitter easily.

I eat whatever I'm in the mood for -- anything from Lindt, Callebaut, or Valhrona, even their milk chocolates are fine with the right wine.

The problem, however, is that most chocolates, especially the high percentage issues, are too dry to really come out with the wine. The best of all possible worlds is something like a flourless chocolate cake, but then I recommend a nice Port.

I'm a rakish character and I even like Merlot with brownies.

1975 vintage still tastes very young, but this one bottle of st emilion showed too much acidity and a (small) lack of balance. I was also lucky to pull out the cork in three parts without actually leaving one in the bottle

I have sampled several bottles of the same case, and this one was the less exciting.
Going through my 1975 bottles will probably become more and more hazardous as time goes by. I will attend an auction at the end of april and see if I can get some sauternes from the 1975 vintage, they should be more consistent.

After a crappy day at work, a stiff Manhattan (in keeping with my NYC fetish), using 101 Wild Turkey instead of rye, and light on the vermouth.

As I fell asleep earlier today due to being up late on Thursday, a late drinking report (was a weird night. went to practice then out with my wife and her boss to eat at a sushi place that unbeknownst to us around 22:00 got flooded with approximately 150 frat guys and their girls. The noise of glasses being dropped on the tables and amount of screaming was just unbelievable. Then went home and worked on some docs for work until I think 4 in the morning or so).

Anyway, I came across a Leffe Blonde ale today. Will be opening it up momentarily...
